Many people may be familiar with the name Ginbis, a long-established manufacturer of baked goods such as Tabekko Dobutsu and Asparagus. However, the origin of the name is surprisingly unknown. We are often asked, "What does the company name Ginbis mean?" In fact, the name Ginbis is a combination of "Ginza" and "biscuit." Founded in Sumida Ward in 1930, we changed our name to "Ginza Bakery" in 1945 and opened an office and restaurant in Ginza. Then, with the determination to "make the most delicious biscuit in Ginza!", we have been working hard to make sweets. Our main product at the time, "Ginbisco," won the Honorary Grand Prize at the National Confectionery Exposition, becoming the best in both name and reality. Thus, in 1974, we changed our company name to "Ginbis" because of our commitment to "Ginza," the place, and to "biscuits." The most delicious biscuit in Ginza. This deliciousness is still passed down to all Ginbis products today.


Hello! The biscuits you eat are made by baking wheat dough, but if you heard that the dough is alive, you would be surprised. Biscuit dough is made by adding various ingredients such as sugar and water to wheat. This recipe is of course a secret secret of Ginbis that is not shared with anyone. It is made using the experience and ingenuity that have been cultivated over many years. The well-kneaded dough is as warm as a human earlobe when it is first born. It rises well when it starts to bake, then shrinks a little and settles into its shape. When it comes out of the oven, it cools down and tightens, and the state continues to change continuously until it is packed into the package. The people in charge at the site all say that this change is "just like a living thing." The people in charge of the line are veterans in biscuit making. They manage the inside of the factory and the line with expert skills so that the biscuits are always baked under the same conditions, even if there are changes in temperature and humidity. It takes years of experience to be able to tell just by taking a bite of a freshly baked biscuit whether it has the delicious "Ginbis taste." If you put your heart and soul into making the dough so that it tastes delicious, the dough will respond to that. It's because you truly love making sweets that you can listen to the voice of the living dough.


Do you know about Monde Selection? Monde Selection, which began in Belgium in 1961, is a system for evaluating the quality of consumer products such as food. It awards top quality awards such as the highest gold, gold, silver, and bronze depending on the quality, and various foods in Japan have won the award. The year is 1975. Ginbis, which was growing in confidence in its delicious biscuits, approached Monde Selection in Belgium, which was still unknown in Japan, to see if it could be judged. Biscuits are originally European sweets. Would biscuits made in Japan be accepted in Europe? Despite such concerns, they submitted their most confident product, "Asparagus Biscuits." As a result of the judging, they were happily awarded the gold medal. The delicious baked goods that Ginbis has been pursuing for many years were recognized worldwide, and the company was very excited. It seems that the award for "Asparagus," which was a big hit in Japan at the time, was one of the reasons that Monde Selection became widely known among domestic food manufacturers. It's interesting to think that one of the reasons why Monde Selection became so popular may have been Ginbis asparagus.


Tabekko Dobutsu are filled with all kinds of animal shapes. Have you ever tried to count how many kinds there are? The answer is 46 kinds. The animal names are written in English on the animal-shaped biscuits, which is good for your child's intellectual development. Now, cute-looking animal-shaped biscuits are sold all over the world, but most of them are printed with animals, and there are few products like Tabekko Dobutsus that are shaped like animals. What's more, it's surprising that there are 46 kinds! Biscuits need to be baked fluffy and delicious, but if letters or pictures are printed on them, uneven baking can occur in those areas and the dough may not rise properly. Moreover, if the shape of the biscuit is different, the uneven baking will be different, so it's difficult. So it's not easy to bake various shapes of biscuits like Tabekko Dobutsus fluffy and delicious. Well, how do we do it? That's a company secret! Although Tabekko Dobutsus is a long-selling product, it did not sell well when it was first released, due in part to the fact that it was packaged in pink, a color that had never been used before. It took a year for the product to become a hit, as the company worked on various product improvements, such as the texture and thickness. It seems that delicious snacks are born from hard work.


Asparagus biscuits are so popular that Ginbis is synonymous with it. Even now, more than 55 years after its release, its popularity shows no sign of waning. However, this long-selling asparagus actually has a hidden twist to it. When asparagus was released, Japan was still in the midst of postwar chaos, and asparagus was a luxury food that was rarely seen by ordinary people. This delicious asparagus-shaped snack was developed to be enjoyed in the living room of the family. It's not just the appearance that makes it so great, but the secret to its deliciousness is that the nodes of the asparagus create a unique texture. However, it is very difficult to bake it evenly while maintaining its shape, and at the beginning of development, the snacks would burn or be undercooked, and there was a lot of trial and error. After much research, the asparagus we know today was born. However, asparagus has evolved and changed shape since its release. For example, when a new oven is introduced, the taste will change slightly even if all the conditions, such as the recipe and temperature control, are the same. In order to respond to these changes, we have repeatedly tweaked our molds and baking methods.
